chore: remove HOST_PROC_MOUNTINFO env override

What does this PR do?

• Removes setting the HOST_PROC_MOUNTINFO environment variable, fixed in [receiver/hostmetrics] Fix filesystems scraper behavior when root file system is mounted open-telemetry/opentelemetry-collector-contrib#36000
