chore(test): improve logic in some tests

[vladopajic]

• tests/mix/testmixnode.nim: setup blocks seems to shadows mixNodes var, but code still works? anyway changed code to be less mysterious to the reader.
• tests/testnameresolve.nim: callbacks must not assert, it should be done in main execution path. becasue there is always risk of callback not being called (like we experienced with recent chronos changes).
