`esc env edit` should return the newly updated version of the environment

Currently, at the end of esc env edit there is no feedback about the new version of the environment. We should return some metadata to indicate what the new version of the environment is.

We might need the corresponding api endpoint to return this information so it can be reused by the SDK (TBD sdk ticket)
