Switch `pixi info` and `pixi install` order

I've been debugging a failure at the pixi install --locked stage (likely due to a version mismatch between the pixi used for generating a lockfile, and the pixi used for creating the environment).

Since pixi info is after pixi install --locked in the workflow, I don't actually know what version of pixi is being used in the setup action since its not emitted in logs at this point. It would be useful to have a pixi --version call in the "Downloading Pixi" log group.

by default, you can assume that setup-pixi downloads the latest version from the github releases of pixi.

but i'm fine with switching the order of the pixi info part and the pixi install --locked part of the CI. open for PRs

Looking back at this - this feature request wouldn't really have helped me that much in debugging, the problem was elsewhere. I would like to retract my original feature request, feel free to leave open if you feel that switching pixi info and pixi install would still be helpful - or close if not

I don't have capacity to work on a PR here. Thanks :)
