[major] Plotting revamp

For V2, there is a major revamp of the plotting back-end planned 🚀
This issue collects all planned changes.
We will tackle the complete plotting back-end in the first weeks of may. Until then, feel free to leave a comment, if you want to add something

• Remove matplotlib

• Reconsider color palette (take a look at https://jrnold.github.io/ggthemes/reference/tableau_color_pal.html)
• Proper label names when plotting uncertainty
