Why does brew install postgresql install postgresql@14 instead of postgresql@16?

Why does brew install postgresql install postgresql@14 instead of postgresql@16?

Also, why doesn't it link postgresql@14's binaries into /opt/homebrew/bin?

brew install Postgres installs the latest Postgres at the time we started making them versioned by default. We can probably switch it, but nobody made a pr for it yet
