[BUG][Opensearch] Setting esJavaOpts has no effect

Describe the bug
Setting the chart value esJavaOpts has no effect on the Java Options used by the running Opensearch process.

To Reproduce
Steps to reproduce the behavior:

1. Set esJavaOpts to a non-default value.
2. Install the chart
3. Watch the startup messages from Opensearch
4. See that the configuration set in esJavaOpts is ignored.

Expected behavior
I expect the esJavaOpts values to be applied.
