feat: add exporterhelper profiles telemetry metrics

Description

This adds obs metrics to the profiles exporters using exporterhelper package.

This will be used by the profiles xexporterhelper initialization: https://github.com/open-telemetry/opentelemetry-collector/blob/main/exporter/exporterhelper/xexporterhelper/profiles.go#L189
