This PR adds a new .readthedocs.yaml configuration file to support automated documentation builds and also updates the gitignore for pixi-related assets.
- Adds .readthedocs.yaml with configuration for version, build environment, Python version, and MkDocs settings.
- Updates gitignore for pixi assets (diff not shown here).
