DOCKER_API_VERSION is too old

According to this guide, I've set the Docker API version to 1.44: https://github.com/nextcloud/all-in-one#how-to-adjust-the-internally-used-docker-api-version guide. Unfortunately, the aio-nexcloud container still failed.

I had to edit the file /etc/docker/daemon.json and add the line "min-api-version": "1.41"

this is still an issue - It doesn't matter if I set the docker version or not, nextcloud is still make calls to 1.41
