This PR is mainly to document recent changes in the Engine release process. See jMonkeyEngine/jmonkeyengine#2535 for those diffs.
The GitHub portion of the release process hasn't changed, but GitHub has made cosmetic changes to its website since 2021, so I updated those images as part of this PR.
