This PR adds releases/v3 to the script that ensures required checks are kept up to date.

Merge / deployment checklist

Confirm this change is backwards compatible with existing workflows.
Confirm the readme has been updated if necessary.
Confirm the changelog has been updated if necessary.

Or alternatively, the approach in this PR avoids hardcoding the current release branches anywhere...
