[Bug] Libcrux dependency points to github with an outdated version

Cargo fails to build the crate with:

error: failed to select a version for the requirement libcrux-ecdsa = "^0.0.2-beta.3"

I do reproduce it when trying to just build. Maybe you have a Cargo.lock that hides the issue.
