FIX: Config Backup should exclude agent installers

The nightly config backup currently includes the Elastic Agent installers under opt/so/saltstack/local/salt/elasticfleet/files/so_agent-installers/. This is unseeded and increases the backup tar dramatically (1GB+). We should exclude this folder from the backup.
