nodePackages: use latest node2nix

Description of changes

this updates node2nix to latest version on nodePackages. It is required because git:// url are not valid anymore.
On top of that, it updates "ganache-cli" that was renamed to "ganache"
and it removes npm2nix, the url was old and the package is probably not in use anymore.
