fix: thread list variety bugs

🎯 Goal

This PR fixes 2 bugs:

• The optimistic update of the Thread implementation would cause a race condition sometimes where messages would be sent twice, but with the same key (once for the optimistic update and once for the thread.state upsertion); it should be resolved with this fix
• The FlatList footer component was not updating the replyCount in real time within the ThreadList, which should also be fixed
