fix: native-image-picker pickImage issue

🎯 Goal

Fixes this issue and this Zendesk ticket.

Due to how assetRepresentationMode: auto works sometimes, files and videos in general increase in size (and if they were just below the threshold of 100MB it is very possible that this tips them over). To make things worse, if the OS does decide that it can provide a better resolution/quality of the video we need to wait for the conversion too (even before being able to figure the size out).
