Remove gremlin from minimal and headless packages

Withe the new OpenCypher query engine in place (ref #3112 ) the Gremlin module could be removed from minimal and headless packages.
This will help to reduce the size of the package.

Gremlin will be part of the "all" distribution/package.
Are you using Gremlin on headless or minimal packages?

Nope, we’re sticking to the full/all package

So it will be the same, no changes. This will affect only the "minimal" distribution that will be striped off Gremlin & co jars

nothing to do, gremlin is not part of minimal and headless since the beginning. Moreover, starting from 26.1.1 the new custom buildee script can be used to assemble a custom ArcadeDB distribution: https://docs.arcadedb.com/#custom-package-builder
