Adding an admin password (whether via compose file or in GUI) breaks things with "password invalid"

I'm having trouble getting this to work. Whenever I add an admin password, whether I set the FOUNDY_ADMIN_KEY in the compose file, or through the GUI, I get password invalid for all subsequent attempts to sign in. The password is a simple 9 character password with just letters and numbers. Anyone ran into this and have thoughts on what I might be doing wrong? Do I have to use a secrets file? Could Windows be mangling the hashing of the password or something?

I am using whatever the latest image is and using Docker Desktop on Windows. Thanks so much!
